Roast Goose / 烧鹅

Roast Goose is a traditional famous dish from Guangdong. The preparation involves cleaning a whole goose, removing the internal organs, head, wings, and feet, then inflating the skin. The goose is seasoned with five-spice powder, stitched up, briefly blanched in hot water, and then rinsed in cold water. The skin is brushed with a sugar glaze before roasting.
